It’s almost Halloween and that means it’s time to start decorating pumpkins and making fun treats! My favorite treats are always the ones that involve candy corn! Not only do I love eating it plain, it’s fun to add to recipes too. I’ve made Candy Corn Bark, edible Candy Corn Cups and I still have more tricks up my sleeve.
These Candy Corn Cupcakes are not only festive and fun, they’re surprisingly easy to make. My girls thought it was so much fun to see the candy corn falling out of the middle and couldn’t wait to dig in!
Ready to make your own? Here’s what you’ll need:
Halloween themed cupcake wrappers
White cake mix (& ingredients need to make the batter)
Yellow and orange food coloring
I make it extra easy by using boxed cake mix. I wonder if anyone even makes cake mix from scratch anymore…the boxed mixes taste so good! Prepare white cake mix according to the directions and divide it equally among three bowls. Add orange food coloring to one, yellow to the second and keep the third one white.
Line a muffin tin with Halloween themed cupcake liner and add a spoonful of yellow batter to each. Next add a spoonful of orange batter, then top with the white. Bake until a toothpick inserted in the center comes out clean.
Let them cool and get ready to break out your cupcake corer.
Use the corer to make a hole in the middle of each cupcake. Don’t push too far or the filling will fall out the bottom when the cupcake is unwrapped. Save part of the cake that you pulled out to close the hole.
Stuff the cupcake full of candy corn.
Break off the white part of the cake that you removed with the corer and use it to fill the hole.
When it was time for the icing, I used this Wilton Color Swirl Decorating Set because I really liked the way it blended the icing colors. There is definitely a learning curve to using this and I had some trouble at first. However, practice makes perfect and I eventually figured it out. You may just want to make sure you have extra icing on hand before you start.
